Tuesday Ramblings - Vacation Summer 2005

Arrived for first day of our summer vacation yesterday.  A lovely resort in Quebec.  Steve and the kids are at a water park today -- I have some alone time to read, swim, workout in the gym.  On Wednesday JuJu and I will enjoy an oxygen bath and massage in the spa.

RECIPE OF THE MONTH

CHESTNUT, DATE AND PUMPKIN PUDDING with Whipped Topping
Serves 4 to 6

PUDDING
1 cup dried chestnuts, soaked overnight and cut into halves
1 cup chopped, pitted dates
1 cup water
½ tsp. cinnamon
½ tsp. all spice
¼ cup Vanilla Pecan Pie amasake
2 tbs organic honey or 4 tbs organic brown rice syrup
½ cup organic cooked pumpkin

WHIPPED CREAM
CHOICE ONE: 1 block silken tofu (drained)
1 tsp. vanilla extract
½ cup organic honey
1 tbs. safflower oil
Add Vanilla Rice or Soy milk if consistency is too thick
- OR -
CHOICE TWO: Whip up organic whipping cream, plain-the pudding is sweet enough!

Soak chestnuts overnight. Drain chestnuts, rinse and cut into halves. Place them into a medium sized glass pot with ¼ inch water covering the bottom of pot and cook over a low flame for 1 hour. Keep adding water as they cook to prevent bottom of pot from burning. Then add chopped dates, cinnamon and allspice and cook for another half hour. Keep checking mixture and adding water when needed, to make sure it remains moist as it cooks. Once the chestnuts are sufficiently cooked (they should be soft), add the amasake, honey and cooked pumpkin and cook for 3 more minutes

While the chestnuts are cooking, prepare the whipped cream as follows:
Put silken tofu, vanilla extract, and honey in a bowl and mix with an immersion blender. Blend tofu to a creamy consistency. Slowly pour in the oil, and blend for 1 more minute. Put bowl in refrigerator to cool. When the chestnut mixture is finished, remove whipped cream from refrigerator and add honey, mixing with immersion blender. Blend until smooth. Pudding can be served immediately or chilled, and topped with this delicious non dairy whipped cream.

Optional: Sprinkle with chopped walnuts or orange grinds.

TECH EXECS SAY EDUCATIONAL SYSTEM NEEDS GREATER PRODUCTIVITY
Top executives of Microsoft, Adobe, Symantec, McAfee, and other leading technology companies have urged Congress to promote math and science in U.S. schools. "Why can't we get in the educational system the same increase in productivity that we've gotten in the rest of the economy?" asked Art Coviello of RSA Security.
